This is the most unusual coffee in the collection — and one of the most interesting to explain to someone who has never tried it. Green beans from a single Guatemala origin spend 30 days resting inside a bourbon whiskey barrel, absorbing wood character and the ghost of the spirit that lived there, before being roasted to order.

The story

The barrel aging process works similarly to the wine-barrel aging used with some specialty teas and spirits: the porous green coffee beans absorb congeners (flavor compounds from the wood and whiskey residue) during the 30-day rest. After aging, the beans are roasted — the heat drives off the alcohol and locks the wood and vanilla notes into the bean structure. The final cup carries the warmth and complexity of the barrel without any alcohol content. This version uses Guatemala single origin as the base, chosen for its natural dark chocolate and butterscotch character that complement rather than compete with the barrel notes.

How to brew

French press or Moka pot for the full expression of barrel character. Medium-coarse grind, 200°F, 4 minutes. For pour over, grind slightly coarser than usual — the dense, aged beans need a bit more contact time. This coffee is also exceptional as an espresso: the vanilla and oak notes concentrate beautifully.
