The story
Grown by micro-farms in Alajuela — the fertile Central Valley region of Costa Rica — at 1,300–1,445 meters, in volcanic loam soil. The varieties are Caturra and Catuai, both compact plants suited to the micro-farm scale that characterizes Costa Rican coffee production. Eco-pulped (honey) processing: the fruit skin is removed but a portion of the mucilage is left on the bean during drying, contributing a natural sweetness and body that fully washed coffees lack. Sun dried outdoors.
How to brew
Works well in any method. For the cleanest apple and honey expression, use pour over or drip. For a richer, fuller cup that brings out the raisin notes, French press. Medium grind, 200°F for all methods.
