The story
Sourced from the Parana and Sao Paulo regions of Brazil — the country's most productive coffee belt — at 750–1,050 meters, from farms in the Fazenda Santa Barbara network (São Francisco and Santo Antonio). The varieties are Catuai and Mundo Novo, both well-suited to the lower altitudes and mechanized harvesting that characterize Brazilian production. Pulped natural processing: the fruit skin is removed but the mucilage is left on during drying, which adds body and sweetness compared to fully washed coffees, while maintaining cleaner character than a full natural.
How to brew
Versatile and forgiving. Excellent in drip, pour over, AeroPress, or espresso. The smooth, low-acid profile makes it an ideal base for lattes and flat whites — the cocoa notes persist through milk. French press brings out extra body and nuttiness.
Why it's in our collection
